Diabetic-friendly foods

Jun 25th, 2010

A large percentage of Community Care Clinic patients have diabetes. While there is no cure as yet, the condition can be managed and diabetics can live happy, fulfilled lives. Controlling diabetes requires paying close attention to food intake, weight, exercise and medication. The type and amount of foods is of prime importance in controlling diabetes so, after answering many food-related questions, the clinic staff set about finding innovative ways to address this vital aspect of life.

The Clinic is partnering with Christine Duncan, Family and Consumer Extension Agent at The Oldham County Cooperative Extension Service, to provide opportunities for clinic patients to learn to prepare tasty, diabetic-friendly foods. Her first recipe is for apple crisp made with fresh apples and cranberries with a crunchy oatmeal crust...yum! These foods are good for anyone, for that matter!

Chris is going to be at The Clinic one day per month during clinic time with a different recipe for everyone to taste. She’ll have the ingredients handy along with the recipe and finished product. She’ll be available for questions and will show everyone how to prepare the dish.

We are looking forward to this helpful addition to our medical care for our patients with diabetes. And, a huge “thank you” to Chris for her willingness to help!
